Caramel, from the Spanish “caramelo,” is created by melting sugar at a high temperature until it turns a deep amber color. This simple yet divine concoction has origins that can be traced back centuries. While sugar itself was a luxury item in ancient civilizations, its use in cooking and baking became more prevalent during medieval times.

By the 17th and 18th centuries, sugar became more accessible in Europe, leading to an explosion of sweet culinary innovations, one of which was caramel. The French, in particular, elevated caramel to an art form, incorporating it into numerous pastries, desserts, and candies.

But caramel wasn’t limited to Europe. Thankfully, it made its way to the Americas where new twists on caramel desserts emerged in every region, each reflecting unique local flavors and ingredients.

Pumpkin Elevated to New Heights

Before pumpkin-spiced everything became a sensation, pumpkins had deep roots in the culinary history of the Americas. Native Americans utilized it in versatile and inventive ways, including roasting, boiling, and even converting it into flour. One of the earliest known recipes incorporating pumpkin in colonial America is for a pumpkin pie-like dish.
